Why do some people (mostly Arabs) combine salats? I'm a hanafi, and I know this isn't allowed, but I was wondering if I could get some daleel or explanation for this to have an answer for those who ask me. And for asr salat, is there a document that you can direct me to that explains the difference of timings between Shaafi and Hanafi salat? It is very difficult to make Arabs understand that what Hanafis do isn't wrong.

As-salāmu ‘alaykum wa-rahmatullāhi wa-barakātuh.
 
The issue is not about Arabs joining Salah. It is an issue of different opinions of the different Mazahib (Schools of thought, Hanafi, Shafi Maliki and Hambali.) It is possible that you are exposed to Arabs combining Salats, hence you question about Arabs joining Salats.
 
Joining two Salats , for example, Asr Salat with Zuhr Salat  by delaying Zuhr Salat until Asr time and perform both Salats together. Likewise delaying the Maghrib Salat and perform it together with Isha Salat is known as Jamah baina Salatain (جْمَعُ بَيْنَ الصَّلَاتَيْنِ), which according to other Mazahib is permissible when travelling. As followers of the Hanafi Mazhab, we do not do Jamah baina Salatain (جْمَعُ بَيْنَ الصَّلَاتَيْنِ) even while travelling. We will perform each Salat in its respective time. At most a traveler may delay his Zuhr Salat until just before Asr Salat and perform Zuhr Salat in its time. Thereafter, he would perform Asr Salat when the Asr time sets in. The Maghrib and Isha Salats will be performed likewise.[3]
 
There are different opinions by the Imams of Fiqh on the ending time of Zuhr which then impacts on the commencing time of Asr Salat. We believe that all the Imams of Fiqh were academic giants, who deduced opinions from their profound knowledge of the Quran and Ahadith. We respect and tolerate such differences.  
 
In the case of the beginning times of Asr, if you are in a Shafi dominated area you may  perform your Asr Salat according to their time.
